Recipe Description

An amazing spice and nut mixture that can be sprinkled on salads or pasta dishes, mixed with olive oil and brushed on pita or pizza dough, or coated on chicken or fish and then grilled. You can also take some great bread, dip it in olive oil, then in the Dukkah... heaven. Enjoy!

Ingredients

1/4 cup coriander seeds

1 1/2 teaspoon black peppercorns

1/4 cup sesame seeds

1 tablespoon fennel seeds

1/2 cup almonds

2 tablespoon ground cumin

1/4 teaspoon thyme (or 1 teaspoon fresh thyme)

1 teaspoon salt

Olive oil

Bread (pita, baguette)

 

Preparation
  1. Heat a heavy skillet over medium-low heat.
  2. Stirring freqently, toast the coriander seeds and peppercorns until fragrant (about 5 minutes).
  3. Coarsely grind in a mortar, being sure to crack all the peppercorns.
  4. Toast sesame seeds until slightly brown.
  5. Toast almonds until slightly brown.
  6. Allow seeds and nuts to cool.
  7. Transfer all ingredients to a food processor. Grind until crumbly. Do not allow mixture to become a paste.

Serve dukkah with bread and olive oil. Dip bread into the oil and then the dukkah.

Can be used on salads.
